80 gAngel Hair Pasta
20 gWheat Flour

Kong Pao Sauce

25 g Young Ginger (sliced)
25 gGarlic (peeled and sliced)
15 gDried Chilli
150 gWater
7.5 gOyster Sauce
35 gDark Soy Sauce
75 g Light Soy Sauce
150 g Black Vinegar
15 gChicken Stock
190 gFine Sugar

Kong Pao Chicken

100 gChicken Breast (diced into cubes)
20 gCapsicum (diced into cubes)
20 gOnion (diced into cubes)
5 gSpring Onion
10 g Young Ginger (sliced)
5 gGarlic (peeled and chopped)

Method

Cooking method for Golden Angel Ring Basket

  1. Cook the angel hair pasta according to package instructions until al dente (2 mins). Drain and set aside
  2. Sprinkle the pasta with wheat flour and gently toss to coat evenly
  3. Shape the pasta into a bowl-like basket using two ladles. Gently press the pasta against the curve of one ladle and use the other ladle to mould the opposite side.
  4. Heat the cooking oil in a large pot. Carefully lower the pasta basket into the hot oil and fry with medium heat until golden brown and crispy.
  5. Set aside to use

 

Cooking method for Kong Pao Sauce

  1. Heat the oil in a saucepan over medium heat. Add the ginger and garlic, and cook until fragrant
  2. Add the dry chilli, fry until aromatic
  3. Pour in the water, oyster sauce, soy sauce, black vinegar, chicken stock and sugar. Bring to a simmer and cook until slightly thickened and reduced
  4. Strain the sauce to remove dry chilli, ginger and garlic.
  5. Reserve the sauce for later

 

Cooking method for Kong Pao Chicken

  1. Marinate the chicken with salt and pepper
  2. Heat the pan over high heat. Add a thin layer of oil and stir-fry the chicken until golden brown and cooked through. Remove from the pan and set aside
  3. In the same pan, add a little more oil and stir-fry the ginger, capsicum, garlic, and onion until softened.
  4. Add the cooked chicken back to the pan and toss to combine
  5. Add the Kong Pao sauce and stir-fry until the chicken is coated with the sauce
  6. Add in spring onion, cashew nuts, stir to combine
  7. Nestle the stir-fried chicken and vegetables within the Angel hair basket, creating a modern twist on the classic yam ring
