Ingredients

1 cupSan Remo Small Shells
3/4 cupPlain flour
1 tspBaking powder
1 tbspSugar
1 tspSalt
1/2 tspCayenne pepper (optional)
2Eggs
1Onion, sliced thinly
1/2 cupMilk
1 tinCorn kernels
2 stalksFresh spring onion, chopped
Cooking oil for deep frying

Method

  1. Cook San Remo Small Shells according to the packet instructions.
  2. Combine flour, baking powder, sugar, salt and cayenne pepper together. Add in eggs and mix well.
  3. Add in the balance of the ingredients and combine evenly.
  4. Heat up cooking oil, drop fritter batter by spoonful into the hot cooking oil. Fry until golden brown and drain on paper towels.
  5. Serve hot with ketchup.
